VEGAN NACHOS!! Since we’re all snacking like crazy during this quarantine, we thought we’d give you guys a healthy version of this Mexican-American favorite!
3 tablespoons of Butter
3 tablespoons of Flour
Vegan meat crumbles
(or pre-cooked black beans)
1 cup of Unsweetened Coconut Milk or Almond Milk
Your favorite vegan cheese (Cheddar, Pepper Jack, or Taco Blend)
First we will make a “Roux”.
Add the butter to a pot or sauce pan on medium heat. Once melted, add the flour and mix it VERY well with the butter and cook until the mixture starts to turn slightly brown and bubbly. Add half of the vegan milk to the flour-butter mixture and mix well until there are no lumps, Then add the rest of the vegan milk. Blend well and add your vegan cheese. Mix until it’s melted together. Season the mixture to your liking with taco seasoning, onion powder and garlic powder, salt and pepper. (If your taco seasoning has salt you may not need added salt. If it becomes too thick or salty, just add more vegan milk to the mixture). To make the nacho cheese spicy, add red pepper flakes or hot sauce. Mix well and place it on low heat until it thickens to the consistency of nacho cheese. Stir occasionally to prevent burning.
